3 pounds boneless, skinless chicken breasts
1/4 teaspoon thyme
1 onion, chopped
1 cup water
1 pound green beans, cut into 1-inch pieces
1/4 cup butter
6 ounces mushrooms, sliced
2 tablespoons flour
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon pepper
1 cup heavy cream
1 tablespoon vermouth
1/4 cup Parmesan cheese, shredded


Season the chicken breasts with thyme, salt, and pepper.

In a large skillet, heat butter over medium-high heat. Add the chicken breasts and cook until they are browned on both sides. Remove the chicken from the skillet and set aside.

Return the chicken breasts and green beans to the skillet, nestling them into the sauce. Reduce the heat to low and let the chicken and green beans simmer in the sauce for about 10 minutes or until the chicken is cooked through.

Sprinkle shredded Parmesan cheese over the chicken and green beans. Cover the skillet and let it sit for a few minutes until the cheese melts.
